Sunday Breakfast Experimenting

Sunday is usually our lazy day.  We still go to the gym at some point for an hour or two, but we take our time getting up in the morning, watch some tv, and usually make a big breakfast.

This morning, I finally tried making Gluten Free Protein Pancakes. I've been wanting to make them for months and never got around to it but this snowy weekend seemed like the perfect time to try them out, and, I actually had everything I needed to make them in the house already.



I used a recipe I found on The Healthy Maven here and they turned out pretty good.  I used Bob's Red Mill Coconut Flour and Solgar Whey to Go Whey Protein Powder (also gluten free) and I used Rice Milk instead of Almond/Coconut Milk.


I always start with a base recipe and follow it the first time, then when I make them the next time, I modify things for my taste etc. Next time I make them, I think I'll put in just a little more banana to give them a thicker consistency.

I also made a topping to go with my pancakes using homemade applesauce (approximately two tablespoons), fresh blueberries (1/4 cup), and a little agave (approximately two teaspoons).  I put everything in the pan I used to cook the pancakes and heated them up just enough to blend the apple sauce and agave together and so the blueberries were soft but had not started to burst open.  Then, I topped the pancakes with my topping and enjoyed.  Delicious!
